Game 65588:sunlight on map#106 when playing water on x-0 y-11, x-1 y-10 and x-2 y-10. Should get 7 points but only gives 4 points.

Not sure where you are getting 7 points from. There are only 4 red pieces touching the water you want to place.

If I place a three water at x-0 y-11, x-1 y-10 and x-2 y-10, I should get 3points for x-0 y-11. 2 points for x-1 y-10 and 2 points for x-2 y-10. All pieces adjacent to each water.

A three-space water counts as one water tile, not three. You only score the points for the four red tiles being adjacent to the one three-space water, so four points.

The way you're getting 7 points is to double-count the red tiles as adjacent to each space making up the three-hex water, I think. That's not how it works.
